Oreo Cake 0

A few weeks back a really good friend of mine came to dinner and brought along an Icebox Cake.  It was one of the most delicious cakes desserts I have had.  She got the recipe from the Magnolia Bakery cookbook which she brought when she was in New York last year.

At the weekend we were invited to a family gathering and I said I would do dessert.  Remembering how delicious it was I wanted to make something similar.  I finally settled on an Oreo Cake which I found on smitten kitchen via Pinterest.



It was really easy to make and the end result was fab.  I made a few adjustments to the recipe on smitten kitchen.  I separated the Oreo’s and whipped the insides in with the fresh cream.  Once I had whipped the two together so that it was nice and thick I then added a couple of teaspoons of Cointreau.  It was delicious.  You have to make the cake the night before and leave the “cake/biscuit” tower in the fridge to allow the biscuits to soften and take on a cake like texture.  I would rate this with a 9 out of 10 for ease of making and end result.  It costs a fair bit to make (so best to pick up the Oreo’s when they are on special offer) and seriously I dread to think of the number of Weight Watchers points each slice would contain. But it looked impressive.
